4 to 5 large Mattamuskeet or sweet onions, sliced 1/4 inch thick
1/4 c. butter
2 tbsp. bacon drippings
4 slices bacon, cooked crisp and crumbled
1/4 c. sour cream
3/4 c. grated parmesan cheese
1 tsp. thyme
1/4 tsp. crushed red pepper
1/2 sleeve butter flavored crackers, crushed.

Directions:
In a large skillet over medium heat, saute onions in the butter and bacon drippings until clear remove from the heat. Stir in sour cream, bacon, thyme, and red pepper. Spoon half of the onion mixture into a greased 1 qt. baking dish sprinkle with cheese, then with the remaining onion mixture and top with the crushed crackers. Bake uncovered at 350º for 25- 30 minutes until brown and bubbly.

A great side to serve with a steak and a salad.
Mattamuskeet onions are large and more round than a Vidalia or Walla Walla onion and have a longer shelf life. They are Grown in Eastern NC in Beaufort and Hyde Counties. It is a favorite for cooking among Coastal Carolina.
