1 to 1 ½ boneless, skinless Chicken breasts - cut into 1" cubes
2 tbsp Olive oil
1 can of whole Water Chestnuts, diced
4 sticks (or equivalent) Carrots, rough chopped
2 bunches spring Onions, rough chopped
4 Garlic cloves, minced
1 bottle Peanut Sauce - approx 11 oz (less if preferred)
Broccoli (optional and quantity preferred)
1 lb Thin Spaghetti/Cappelini
1/2 cup Pasta Water

Directions:
Directions:
In a large frying pan, saute chicken and garlic until slightly brown. Add carrots/broccoli, spring onions, water chestnuts.

Cook pasta - al dente.

Add pasta water and cook vegetables until tender. Add peanut sauce.

Mix vegetables and peanut sauce mixture into pasta and serve.
