1 Granny Smith apple, unpeeled, quartered, cored and cut into 1/3" dice
2 1/2 oz roasted walnuts, lightly crushed
1 3/4 oz pickled walnuts, rinsed and cut into 1/3" dice
1 T rice vinegar
2 T lime juice
1 T mirin
1/3 oz tarragon, finely chopped
3 T olive oil
course sea salt and black pepper

Mix together all the ingredients for the salsa in a medium bowl, along with 1/2 t salt and pepper.
