3 lbs. ground meat (pork, beef, venison work equally well, or mix two meats together.)
1/4 tsp. ground pepper
1/4 tsp. garlic powder
1/2 tsp. onion powder
2 tsp. mustard seed
3 tbsp. Morton Tender Quick Curing salt
1 tsp. liquid smoke
1 cup cold water

Mix all ingredients well. Divide meat into three portions and roll each into a cylinder shape. Wrap each roll in aluminum foil with the shiny side in. Place in refrigerator for 24 hours. Preheat oven to 325 degrees. Poke holes in the foil on the bottom of each roll and place on a broiler pan. Bake for 90 minutes. If a drier sausage is desired, take out of foil and bake an for additional 15 minutes.

Description: Sausage made from any ground meat that can be seasoned to taste. It can be eaten as a main course for supper, on sandwiches for lunch, or combined with cheese and crackers as a snack.
