1 box jumbo shells
3 t. olive oil
1 lb. turkey (ground)
3 cloves garlic (minced)
1 1/2 c. Ricotta Cheese
1 pkg. frozen spinach (chopped)
2 eggs
3 c. pasta sauce
1 1/2 c. mozzarella cheese (shredded)

Preheat oven to 400º. Cook shells according to package instructions. In skillet heat oil over medium high heat. Saute garlic for 2 minutes until fragrant. Add ground turkey to skillet & brown. Season generously with salt & pepper.

Mix ricotta, spinach & eggs in bowl. Add cooled turkey to mixture and mix well. Pour 1 cup of pasta sauce to 9 x 13 baking dish. Stuff shells with turkey/cheese mixture. Pour remaining 2 c. of sauce on top of shell and top with cheese. Cover with foil and bake for 30 minutes. Remove foil and bake for additional 10 minutes.

I like to add red pepper flakes to the ground turkey while it is browning to add additional flavor.
