3 c. 'All Bran' cereal (no substitutions, I've tried...)
1 c. boiling water
1/2 c. oil (coconut oil for healthier version)
2 eggs
2 1/2 c. flour (I use 2 c. whole wheat, 1/2 white)
1 1/2 c. sugar (I use 1 cup)
2 1/2 t. baking soda
2 cups buttermilk
optional: 1 c. raisins, 1/2 c. nuts, 1c. cranberries, dried or fresh, 1/4 c. wheat bran, 1/8 c. flax seeds, or flax meal - basically anything you want!)

Heat oven to 400 degrees. In lg. bowl combine cereal w/ water. Stir in shortening and eggs. Add remaining ingredients. Spoon into greased or lined muffin cups. The covered batter will keep a week in the refrigerator, bake as many as you like. Bake 18-22 min.

My mom and I discovered this recipe when I was a teenager. We've been making them for 30 years. They are very versatile and forgiving with adjustments to the ingredients.
