4 or 5 vine-ripened tomatoes (or you can use small cherry or grape tomatoes), diced
3 or 4 garlic cloves minced or through a garlic press
3/4 to 1 Cup good extra virgin olive oil
5 or 6 basil leaves julliened
1 loaf of Italian or French Bread baquettes

Directions:

1. Marinate and refrigerate garlic and olive oil in a bowl for a few
hours or overnight.
2. Slice bread into 1/4 inch slices and place on cookie sheet
3. Brush slices with garlic infused olive oil. (Save garlic oil)
4. Bake bread in 350° oven until lightly toasted. Turn slices to brown the other side. (about10 minutes, checking often.)
5. Rub slices on one side with an additional glove of garlic and cool
6. Stir basil and chopped tomatoes into remaining garlic and olive oil mixture 30 minutes before serving
7. Arrange bread slices on platter along with tomato mixture
