1 cut up chicken
1 clove of garlic, halved
1 tsp salt
1 Tb lemon juice
¼ C white wine
1 Bay leaf
3 Tb olive oil
1 Tb flour
¼ C each of thinly sliced or diced chopped onion and green pepper
1 C thinly sliced or diced carrot
½ C sherry

Directions:

Rub chicken with cut garlic and salt. Mix together a marinade of lemon juice, white wine, and bay leaf; add chicken and stand for at least 2 hours. Remove chicken and pat dry; reserve marinade. Brown chicken in hot oil. Stir flour into drippings in pan; stirring until smooth. Add onion, green pepper, carrot, and the marinade, and heat thoroughly; add sherry. Bake in moderate oven (350) or cook gently in covered skillet til done….about 20-30 minutes. Remove bay leaf before serving.
