2 c flour
2 tsp baking powder
1/2 tsp salt

2 eggs
1/2 c canola oil
2/3 c sugar
1/2 c buttermilk
2 Tbsp lemon juice
Zest of 1 lemon

1 c zucchini

Directions:
Directions:
PREHEAT oven to 350º
Grease and flour loaf pan

BEAT eggs
Add oil, sugar
Blend

ADD buttermilk, lemon juice and zest
Blend well

FOLD in zucchini and stir to distribute evenly

ADD dry ingredients.
Don't over mix.

Pour in loaf pan to 2/3 full

BAKE for 45 minutes or until a tester inserted into the center of the loaf comes out clean.
