2 c. fresh basil leaves
2 large cloves roasted garlic
½ c. grated Parmesan cheese
¼ c. pine nuts or almonds (optional)
½ c. olive oil
15 oz. ricotta
salt and fresh ground pepper

Directions:
Directions:
Combine basil, garlic, nuts and Parmesan in a food processor and mix.
With the processor running, slowly add olive oil. Process to desired consistency. Blend in ricotta. Season to taste with salt and pepper.
Serve with toasted bread rounds or pita chips.
