3 lbs. potato's, peeled and sliced and cut into strips or wedges (apx. 9 cups)
1/3 cup Extra-virgin Olive Oil (EVOO)
1 1/2 cup T. Garlic Powder
1/2 T. Onion Powder
1 t. Chili Powder (optional)
Salt and Pepper to taste

1. In a small bowl, whisk together the olive oil, garlic, onion, chili powders (if using), and salt and pepper.

2. Place your fries in the slow cooker insert and pour oil mixture over the potatoes. then toss to coat them.

3. Turn slow cooker on HIGH and cook for 2 1/2 Hours, stirring every hour, or until potatoes are fork tender. (Begin checking at 2 hours to make sure not to over cook)

4. Remove from cooker and serve with ketchup or tarter sauce
