Directions:Preheat oven to 400º
Grease one or two pizza pans or cookie sheets.
In a large bowl, combine 2 cups flour, sugar,salt and yeast; blend in an electric mixer with a dough attachment if available. If you have dough relaxer, add that with the flour mixture. It will make it easier to roll out the crust, but since it may be hard to find, it is optional.
In another bowl, mix warm water and oil together. Add the warm liquid mixture to flour mixture. Blend at low speed until moistened. Add a little bit of flour at a time and mix on low until the dough pulls cleanly away from the sides of the bowl. Then beat on low to medium (not high) for eight minutes.
Make the dough into a ball and place in a greased bowl. Cover it loosely with plastic wrap and a cloth towel. Let rise until double in size.
Punch the dough down and take it out of the bowl and lay it on a clean, oiled, flat surface. Divide into 7 six oz portions for thin crust (or 6 portions for a thicker crust).
Roll out one of the dough portions as flat as you can in the shape of the pan. Place on the pan and use your fingers to stretch it from the inside out until it reaches the edge of the pan. It takes patience, Rome wasn't built in a day!
Use a fork to prick holes in the pizza dough to prevent bubbling of the crust. Place pan in 400º oven for 5 min. It will not be totally done but it will finish cooking when you put the toppings on.
Repeat for all dough portions until all the crusts are done. Place on a rack until completely cool. You can stack them with wax paper in between and place in a big bag to put in the freezer. These freeze well and are nice to have on hand for a quick pizza.
