2 lbs. round steak cut 1/4 in. thick
3 tbl olive oil
1 onion finely chopped
1/2 lb. mushrooms sliced
1 tbl tomato paste or 1 peeled tomato sliced
1 tbl flour
1/2 cup sherry or bouillon
salt and pepper
1 pt sour cream

Cut round steak into strips about 1/4 in thick and 1 inch long. Brown in skillet. Push meat to one side and add onions and mushrooms. Sauce until onion is soft and mix with meat. Stir in tomato paste. Sprinkle flour over everything and blend well. Add sherry or bouillon beef stock and stir until a gravy is formed. (I use a cup of beef stock). Cook until meat is tender. Then, blend in sour cream. Heat but do not boil. Serve over egg noodles.
