Grilled Fish with Roasted Red Pepper Sauce and Broccoli Puree Recipe

Ingredients: Grilled Fish 4 fillets (4 oz each) 1 pinch of salt 1 T butter 1 T olive oil
Puree 1 head of broccoli 1 leek 1 pinch of salt 1 T butter lemon juice
Sauce 2 red peppers 2 T Olive Oil 1 shallot minced 3 T white tine 6 T chicken stock s and p lemon juice

Directions:1. Heat the oil in the pan. Add the shallot and cook until soft. Deglaze the pan with white wine and cook for one minute. Add the stock and the cooked red pepper. Cook 5 min. Cool slightly and puree in blender. Season with salt and pepper, lemon juice. Transfer to small sauce pan. 2. Cook the fish - season with s and pepper. Heat the butter and oil in the skillet. Fry on both sides until golden and cooked through. about four minutes per side. Serve on a bed of puree of broccoli and red pepper sauce along side.
Puree- Bring a pot of water to boil. Cut the florets. Peel the stems and use them too. Slice the leek into rings and rinse well. Salt the boiling water, add the broccoli and leek. Cook until very tender, about 10 minutes. Drain. Drop in the butter and puree in a blender. Add pepper and salt and lemon juice.
Sauce: Make the sauce. Heat the over to 400 degree. Set the pepper on a baking sheet and roast until flesh is soft. 35-45 minutes. Remove from oven. Set aside 10 min to sweat. Remove the skin and seeds. |
