fresh lettuce or a combination of mixed greens
1 semi ripe mango
1 red pepper, cubed or sliced
1 carrot, sliced into thin strips or grated
1/2- 1 c cucumber, sliced thin
1/4 c dry roasted peanuts

Basil Dressing
15-20 basil leaves
1 green onion, sliced
3 T fresh lime juice
1 T fish sauce
2 T brown sugar

Directions:

1. Mix vegetables together. Cube and add mango.
2. To make the dressing, place all the basil dressing ingredients in a mini chopper, food processor or blender. Blitz to create a delicious basil dressing.
3. Mix salad ingredients, dressing and nuts. Toss and serve
