1 can salmon, any kind
1 package crackers, generally regular saltines
2 medium eggs
1 medium onion, chopped
salt and pepper, to taste

lemon juice or tartar sauce

Empty 1 can of salmon and juice into a large mixing bowl. Take out the bones and skin if desired. Crumble the crackers into very small pieces and add to the salmon. Add the egg(s) and chopped onion, salt and pepper. Mix all together with a fork or by hand. The texture should be moist, not too dry so the mixture will hold together. Form into patties about 2 -3 inches in diameter and 3/4 to 1 inch thick. In a large skillet, preferably cast iron or stainless steel, add oil, shortening or butter. Make sure the entire surface of the skillet is covered and it is about 1/4 to 1/2 inch deep. Set on medium heat. When the oil is hot but not smoking, add the patties and fry, turning only once. Let the bottom get a nice medium brown, then turn. They will stick if not enough oil is covering the bottom of the skillet. Probably 4 to 5 minutes on each side. Make sure they are cooked all the way through by cutting one in the middle and checking, centers should not be cold, before removing from the pan and serving. Patties will be beautifully brown, crunchy, and very delicious!! Serve with tartar sauce or squeeze on some fresh lemon. mmmmmmmmmmmm ... they are to die for!

Mama made these on a regular basis. She used the most economical cans of salmon she could buy. I'm not sure if she ever used the salmon they caught. Daddy would go...actually the whole family would go ice fishing up at Taylor Reservoir for the Kokanee salmon. Those were fun trips! We would take shovels to clean the snow off the ice so Daddy could drill or cut a hole. I remember him using an axe but I'm not sure. It was so fascinating to look down into the water by laying on our tummies and peering down in. It was like looking into a movie screen. But we didn't spend much time doing that as Daddy was a serious fisherman. We older kids would clean off more ice and go skating. It was a little scary cause you could hear the ice cracking and rumbling all the way across the lake. But it was at least 12 inches thick so it wasn't going to break through. But it did sound eerie. The salmon were the ugliest fish I'd ever seen. Their lower jaw stuck out past the upper jaw and their teeth were sharp and wicked looking. Not a pretty fish by any means. But Mama could fix them in such a way that we loved how they tasted. At least I did! (I made the salmon patties and salmon soup a lot for my own family thru the years.) I know she froze the other kinds of fish, trout, etc., but I think she canned the salmon. I know those fish were a nice supplement to her menus. We enjoyed the fishing trips as well as the bountiful meals they provided. Mama made her own sauce from salad dressing and pickle juice or vinegar. She probably added salt, pepper and sugar to taste. She added a little sugar to most things because she said it brought out the natural flavors of the other ingredients. She could make even the ugliest fish taste like a feast!!
