2 tsp. Vegetable Oil
4 skinless, boneless Chicken breasts, Cubed
1 1/3 c. White Vinegar
1 c. White sugar
1/2 c. Soy sauce
1 tbsp. Red pepper flakes
2 tbsp. Garlic powder
1 tbsp. Onion powder
1/2 tsp. Ground ginger
8 oz. Button mushrooms, sliced
1 c. Frozen peas
3 green onions, chopped
3 tsps. corn starch
2 tbsp. cold water

Directions:
Directions:
Heat vegetable oil in a large skillet over medium/high heat; add chicken cubes, cook completely though. Pour in white vinegar, soy sauce and sugar, stir until sugar has dissolved completely. Add in red pepper flakes, garlic powder, onion powder and ginger powder.

Reduce heat to low/medium, cover and simmer for 15 minutes, then add in the sliced mushrooms, peas and chopped green onions; continue to simmer for an additional 15 minutes.

In a separate dish mix together corn starch with the cold water; add to skillet. Continue to simmer until desired thickness is reached.

May be served as is or over a bed of rice.©
