1 t. blended oil
1 t. minced garlic
2 c. regular milk
2 c. heavy cream
10 oz. good quality Gorgonzola cheese
2 1/2 oz. good quality Roquefort cheese
1 t. coarsely cracked black pepper
Salt to taste
Toasted garlic bread, cut into thick sticks, for dipping

Heat the blended oil in a large saucepan. Add the minced garlic and saute until translucent. Add the milk and heavy cream, and bring to a boil. Reduce heat and simmer 10 minutes before adding the cheeses and cracked pepper. Cook the sauce for about 15 minutes, stirring constantly until the cheese completely melt. Season with salt. Serve with toasted garlic bread-sticks. For the blended oil look for one that is about 65% canola oil and 35% olive oil. The olive oil provides flavor, while the canola has a high burn point so you can saute the garlic. Consistency - the fondue should have a creamy consistency and be thick enough to coat the bread but not drip off. If it isn't thick enough, cook for another couple minutes to reduce and thicken the sauce. Serves 10-15
