Bread crumbs
2 lbs. ground beef
large onion, chopped
garlic clove, chopped
2 c. spinach, chopped
½ c. grated parmesan
2 tbsp. parsley, chopped
2 eggs, beaten
3 slices bread, soaked in milk and squeezed dry
2 tsp. salt
pepper
1 c. mozzarella, cubed
1 c. gruyere, slivered
butter

Directions:

Generously butter 12x4x2 ½” pan. Sprinkle with bread crumbs, shake out excess. Combine meat, onion, garlic, spinach, parmesan, parsley, eggs, bread, salt and pepper in large bowl and blend well. Preheat oven to 350º. Divide mixture in to 3 portions. Put 1/3 mixture in bottom of pan. Sprinkle mozzarella cubes over top. Add another 1/3 mixture and cover with gruyere slivers. Add remaining 1/3 mixture, patting in place to edge of pan. Sprinkle with bread crumbs and dot with butter. Bake until cooked through, about 1 hour.
