2 c chicken broth
1 med. onion, diced
1 c celery, diced
1 med. head cabbage, shredded ( may only need 1/2 head if you add potato)
1 -2 carrots, shredded
1 med. potato, shredded
1/4 c butter
3 Tb flour
1 c milk
2 c cooked ham, diced
2 c light cream (half n half - I use fat free)
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. thyme
Chopped parsley, optional

Directions:
Directions:
Simmer vegetables in broth in saucepan, covered, until tender, about 20 minutes.
Melt butter in saucepan. Stir in flour until smooth. Add milk and cream; cook, until thickened. Add to vegetables along with ham, salt, pepper and thyme; heat through. Garnish with parsley (optional).
Makes 6 to 8 servings, about 2 quarts.

This recipe is similar to the one Mom made. She used milk rather than half n half and did not add ham. Because the soup was all shredded vegetables in a milk broth, we her children thought it looked like slop to feed the chickens, thus the title "Slop Soup." Mom wasn't too happy with the title of this soup, but we all enjoyed it. Karin
