1/4 cup butter, softened, plus more for greasing
8 cups spinach, chopped
16 oz cottage cheese
8 oz aged cheddar cheese, cubed
6 eggs, beaten
2 tablespoons almond flour
1/2 teaspoon sea salt
1/2 teaspoon ground nutmeg

Directions:

1. Preheat the oven to 350ºF.

2. Lightly grease a 9x13 inch casserole dish with butter, set aside.

3. Place a large saucepan filled with water over high heat, and bring the water to a boil.

4. Blanch the spinach until it is tender, about 2 minutes.

5. Drain the spinach, and squeeze out all the water.

6. Transfer the spinach to a large bowl, and stir in the cottage cheese, cheddar cheese, eggs, butter, almond flour, salt, and nutmeg.

7. Spoon the mixture into a casserole dish, and bake until the souffle is set and golden brown, about 35 minutes.

8. Serve.
