1/2 cup butter
3 cup chopped onion or leek (white part only)
1 1/2 lbs carrots, peeled and coarsely chopped
1 1/2 lbs parsnips, peeled and coarsely chopped
4 Granny smith apples, peeled and coarsely chopped
16 cup Vegetable (or chicken) stock
3 1/2 tsp curry powder
Salt and ground pepper

1. In a heavy large pot melt butter over a medium-high heat.
2. Add onions and sweat until softened, about 4 min.
3. Add carrots, parsnips, apples, and saute 3 Min.
4. Add stock, curry and bring to a boil.
5. Reduce heat and simmer until vegetables are very tender, stirring occasionally, about 30 min.
6. Cool slightly. Puree in blender or food processor in batches.
7. Cool, cover and store in refrigerator until needed (can be prepared 2 days in advance).
8. To serve: Heat gently. Adjust seasoning with salt and pepper if desired. Serve with a whirl of whipping cream and dash of parsley.
