3 C Rhubarb, fresh, coarsely chopped, 12 oz.
1 ¾ C + 2 T Sugar, divided
1 C Canola Oil
2 Eggs
1 T Vanilla Extract
3 C Flour
1 t Salt
1 t Baking Soda
1 t Cinnamon, ground
¼ t Baking Powder
½ C Pecans, chopped

Directions:
Directions:
1. Preheat oven to 350 degrees.
2. Prepare two 8 x 4 inch loaf pans.
3. Toss rhubarb with 2 tablespoons sugar.
4. Let stand while preparing batter.
5. In a large bowl, beat oil, eggs, vanilla and remaining sugar until well blended.
6. In another bowl, whisk flour, salt, baking soda, cinnamon and baking powder, gradually beat into oil mixture (battle will be thick).
7. Stir in rhubarb mixture and pecans.
8. Transfer to prepared pans.
9. Bake 50 to 60 minutes or until a toothpick inserted in center comes out clean.
10. Cool in pans 10 minutes before removing to a wire rack to cool.

Yield: 2 Loaves
