No Knead Bread Recipe

3 C Flour or Bread Flour, more for dusting
¼ t Yeast, instant
1 ¼ t Salt
1 5/8 C Water
Extra flour as needed

Directions:
1. In a large bowl, mix the flour and the salt, then mix in the yeast, and then add the water and stir until blended. The dough will be sticky and shaggy.
2. Cover the bowl with plastic wrap and let the dough rest for at least 12 hours, preferably 18 hours.
3. Lightly flour a workspace and turn the dough out onto it.
4. Sprinkle it with a little more flour and fold it over on itself once or twice, then cover with plastic wrap and let rest for 15 minutes.
5. Gently shape the dough into a ball.
6. Coat a cotton towel, not terry cloth, with flour and put the ball of dough seam side down onto it.
7. Cover with another cotton towel dusted with flour.
8. Let rise again for about 2 hours.
9. At least 30 minutes before the dough is done, heat the oven to 450 degrees.
10. Put a 6 to 8 quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats.
11. When dough is ready, carefully remove pot from oven.
12. Slide your hand under towel and turn dough over into pot, seam side up.
13. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes.
14. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is browned.
15. Cool on a rack.
