Pate:
4 oz semi-sweet chocolate
1/2 cup butter
5 egg yolks
1/2 cup white sugar
2/3 cup unsweetened cocoa
1 1/2 cup whipping cream

Raspberry Coulis:
raspberries
bit of sugar

Pate:
Melt chocolate and butter, cool.
Beat egg yolks and sugar until creamy, add cocoa and beat in chocolate mixture.
Whip cream, fold into egg and chocolate mixture.
Pour into loaf pan lined with saran wrap.
Freeze in loaf pan 6 - 8 hours.

Raspberry Coulis:
Puree raspberries and add a bit of sugar. (Can put pureed raspberries through a sieve if you don't want the seeds)
If too thick can add some water, orange juice, some wine or Grand Marnier.

Serve with raspberry coulis and Devon cream. My favourite way is to top with mango sorbet and drizzle raspberry coulis on top!

I make this recipe a lot. Keeps nicely in the freezer up to 3 months. Can also use some and put rest in freezer. Everyone loves this!
