1 lb. Large Dry white lima beans
Enough water to cover the beans
1 small ham hock or ham bone
a couple of pinches of salt

Pick beans for bad looking ones and soak good ones in water overnight.
Drain beans and add water and ham bone and bring to a boil. Lower heat to low and simmer for a couple of hours or until broth thickens and beans are soft.

There weren't many meals better than Maw-Maw's butter beans and corn bread. Having this meal made you feel rich even if it was just beans and bread. It reminds me of one of Maw-Maw's sayings...
They were so poor they didn't have a pot to piss in or a window to throw it out of. Now sing along...Just a bowl of butter beans...pass the cornbread if you please...I don't want no collard greens...all I want is a bowl of butter beans.
