2 (9 inch) deep dish frozen pie crusts
1 tbsp finely chopped green bell pepper
1 small onion, finely chopped
1 (4.5 oz) can mushrooms drained and chopped
6 eggs
2 cup heavy cream
8 oz shredded Monterrey Jack cheese
8 oz shredded Swiss cheese (or mozza)
12 oz cooked ham, chopped
1/2 tsp vinegar
1/8 tsp dried tarragon
1 pinch of garlic powder
1 pinch of ground nutmeg
1 pinch dried parsley
salt and pepper to taste

1. Preheat oven to 350º F and pre-bake crusts for 10 minutes. Set aside to cool
2. In a large skillet, saute green pepper, onion, and mushrooms until onions are soft and translucent. Remove from heat and set aside.
3. In a large bowl, mix eggs and cream together. stir in the shredded cheeses, chopped ham and sauted vegetables. Add cheese, Ham and sauted vegetables to pie base dividing evenly. Stir in the bowl vinegar and season with tarragon, garlic powder, nutmeg, parsley, salt and pepper, Add mixture to the base.
4. Bake in the preheated oven for 55-60 minutes, or until filing is set and crusts are golden brown.
