1/2 can clams large 51 oz cash and carry chef review chopped ocean clams
2- 8 oz jars of clam juice
6 oz Pancetta diced
3 TBS butter
1 yellow onion
2 celery stalks diced
3 med Yukon gold potatoes diced
2 garlic cloves minced
1/2 tsp thyme
3 tablespoons flour
1 c heavy cream
salt& pepper to taste
pinch of cayenne
2 tsp Worcestershire sauce

Directions:
Directions:
over med heat saute the pancetta until crisp, add butter, onion, celery, garlic and tyme cook stirring occasionally until the onion is soft. add flour and cook 1 min more add potatoes, clam juice and bring to a boil. reduce heat and simmer until potatoes are tender. stir in cream, Worcestershire, salt pepper, and cayenne pepper and 1/2 can clam meat.
