Ingredients:  
1 cup brown sugar
1 cup butter
1/2 cup butter or shortening
1/2 cup sour cream
3 cups oatmeal
2 1/2 cups flour
1 tsp soda dissolved in1/4 cup water
Filling:
1 pkg dates
1 cup sugar
1 cup water
OR
1 cup dates chopped fine
1/2 cup chopped walnuts
1/2 cup brown sugar
1/2 cup water

Directions:
Directions:
Combine dough ingredients. Roll thin. Using a cookie cutter, cut into circles. Bake at 350º for 8 minutes, or until slightly golden.

Cook date filling in a saucepan until sugar dissolves. Cool.

Before serving, gently spread date filling on top of oatmeal cookie. Place a second cookie on top to make a sandwich.
