For the dressing:
1/3 cup extra-virgin olive oil
Juice of 1 lime
2 tablespoons soy sauce
2 teaspoons sambal oelek
1 teaspoon fish sauce
1 (7g) stevia packet

For the salad:
4 cups shredded romaine lettuce
1/2 cup julienned snow peas
1/2 cup julienned red bell pepper
1/4 cup chopped fresh cilantro
1/2 lb chopped cooked shrimp
1/2 cup chopped peanuts, for garnish

To make the dressing:

1. In a small bowl, whisk together the olive oil, lime juice, soy sauce, sambal oelek, fish sauce, and stevia.

2. Set aside.

To make the salad:

1. In a large bowl, toss together the romaine, snow peas, red peppers, and cilantro.

2. Add the dressing, and toss to coat.

3. Arrange the salad on 4 plates, and evenly divide shrimp among the salads.

4. Top each salad with peanuts, and serve.
