1 lb. Italian sausage (I like to use turkey Italian style sausage in a roll)
1 cup chopped onion
2 cloves garlic sliced
5 cups of beef broth
1/2 cup water
1/2 cup red wine
1 large can of tomatoes broken up into small pieces with juice
1 1/2 cups thin sliced carrots
1/2 tsp oregano
1/2 tsp basil
8 0z tomato sauce
1 1/2 cups zucchini thinly sliced
1 package of either frozen or dried cheese filled tortellini
1 medium red or green bell pepper diced

Brown sausage and rinse, saving back 2 tsp grease to cook onions and garlic. In a large pot, add the remaining ingredients EXCEPT the tortellini. and simmer for 30 minutes. Add the tortellini and simmer an additional 30 minutes. Serve with parmesan cheese.
