one pork tenderloin chopped into small pieces
1 tbs minced ginger
1 tbs minced garlic
1/2 cup carrot matchsticks
1 cup chopped cabbage or the like
1/2 cup hoison sauce
sesame oil to coat pan
8 green onions, cut green parts about 1" diagonal pieces
3 tbsp low sodium soy sauce

In a wok or large frying pan, heat a few tbsp sesame oil over medium heat. Add ginger and garlic and cook a couple of minutes. Add pork and saute about six minutes until browned. Remove. Saute carrots, cabbage and green onions until softened..about 6-8 minutes. Add pork back to the pan and add hoisin sauce and stir until all is heated through. Add soy sauce and stir a minute. Serve in lettuce leaves vs traditional pancakes. I sometimes add more oil for veggies. I also have subbed a cabbage/kale mix from Trader Joe's that I chop even smaller than package.
