3 (1 lb.) pkgs. ground turkey breast
1 (14.5 oz.) can diced tomatoes, drained
2½ c. Italian breadcrumbs
1 c. egg substitute
½ c. frozen chopped spinach, thawed and drained
⅓ c. carrots, shredded
⅓ c. zucchini, shredded
⅓ c. red onion, chopped
2½ tsp. salt
1 tsp. garlic powder
1 tsp. ground black pepper
¾ tsp. anise
½ c. portabella mushroom, chopped
splash of balsamic vinegar
fennel seed

Combine all ingredients and mix well. Pack tightly into two 1-qt. loaf pans or one 2 qt. loaf pan and bake for 1½-2 hours, or until a meat thermometer inserted in the center reads 165º F. Remove from oven and let rest before serving.

This recipe makes a large batch to eat through the course of a week or to freeze. Serve with brown rice and sautéed wild mushroom and steamed broccoli.
