Honey-Mustard Pork Tenderloin with Apple Gratin Recipe

2 pork tenderloins, trimmed (approx. 1 1/2 lbs.)
1 tsp canola oil
Coarse salt and freshly ground pepper
2T coarse grain mustard
1/2 T honey
1 T chopped thyme leaves
4 black peppercorns crushed

Apple Gratin*
2 Granny Smith apples, peeled, cored and thinly sliced
1 shallot, thinly sliced (1/4 cup)
1 clove garlic, thinly minced
1 T chopped thyme leaves
1/4 C heavy cream
1/4 tsp freshly ground pepper
2 T Parmesan cheese

Pork Tenderloin
1. Preheat oven to 350º.
2. Brush pork with oil. Salt and pepper to taste.
3. in skillet (or on grill) over high heat, brown pork 3-4 minutes on all sides.
4. Transfer to baking pan; bake during the last 20 minutes with gratin.
5. In small bowl, mix mustard, honey, thyme and pepper. Brush on cooked
pork. Slice into 1/4 inch medallions.
6. Arrange gratin in center of plate. Fan pork slices around gratin.

Apple Gratin*

1. Preheat oven to 350º.
2. In greased loaf pan, layer apples, shallots, gralic and thyme. Press
firmly. ( Since I usually double these ingredients, I use a round
casserole dish.)
3. Combine cream, salt and pepper; pour over apples.
4. Bake 20 minutes; remove from oven. With spatula, press apples firmly
and sprinkle with cheeese. Return to oven for 20 minutes.

* I usually double, at least, the ingredients for the gratin. You'll probably have to cook it longer.
