5 or 6 medium - sized potatoes, peeled
3 eggs
5 or 6 tbsp. flour
1 tsp. salt
1/4 c. milk
Oil for frying

Directions:
Directions:
These turn out best by grating raw potatoes on the coarse side of a tin grater. Grate potatoes just prior to frying as they will turn dark quickly. Stir potatoes, add beaten eggs, salt, flour and milk. Let oil become hot and drop small ladlefuls of the batter into it spreading fairly thin in 4 or 5 inch pancakes. Fry quickly and flip over when they become golden brown.
Best eaten right after frying so as not to become soggy.
We love them best with ketchup.

My Mom, Dorothy Bohnert, usually made these for her large family on Fridays when we could not eat meat.
I make this as a treat and it brings back great memories.
