CARROT CAKE Recipe

Ingredients:

2 c sugar
1 1/2 c oil
4 eggs
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 c grated carrots
1/2 c chopped nuts

Frosting
1 8oz. pkg. Phil. cream cheese
1/4 lb. butter or margarine
3 1/2 c powdered sugar ( 1 lb. box)
1/2 c coconut
2 tsp. vanilla

Directions:
Directions:
Combine sugar & oil. Add eggs & beat until well blended. Mix flour, soda, cinnamon & salt, add to mixture. Slowly mix in carrots. Bake in 3 - 9 in. round cake pans, or 1 sheet cake pan.
Bake @ 350º for 30 to 40 min. (do not over bake)

Frosting
Blend cream cheese & butter, add remaining ingredients. Frost layers. Add nuts on top. I prefer whole walnuts for the look, but any nuts works.
