2 lbs Maris Piper potatoes peeled and halved
1/4 c butter
splash of milk
1 oz butter
2 oz flour
chopped onion
1 1/2 C half and half
1 lb assorted fish and or shrimp cut in chunks
1 tsp Dijon mustard
small bunch chives finely chopped handful of frozen sweetcorn
handful frozen green peas
handful grated cheese

Directions:
Directions:
Preheat oven to 392º
Put potatoes in saucepan and bring to boil and simmer until tender. When cooked, drain thoroughly and mash with splash of milk and some butter. season with black pepper.
Put butter, flour and onions in another pan and heat gently until the butter has melted, staring regularly. Cook for 1-2 minutes. Gradually whisk in the 1/2 and 1/2 and bring to boil, stirring to avoid any lumps or sticking to bottom of the pan. 3-4 minutes or until thickened.
Remove from heat and stir in the cheese, fish, mustard, chives, corn and peas
Shoot into ovenproof dish or 6-8 ramekins.
Spoon the potato on top and sprinkle with cheddar cheese. Pop in the oven for 20-25 minutes or until golden and bubbling at the edges.
