Filling:
6 medium tart apples (a variety of apples is the best)
3/4 - 1 c of sugar
2 tsp of fresh squeezed lemon juice
1/2 tsp of cinnamon
1/8 tsp of nutmeg
1/4 tsp of salt
2 tbsp of butter
2 -3 tbsp of flour

Crust: (enough for top & bottom crust)
2 c of flour
1 tsp of salt
2/3 c of chilled vegetable shortening (Crisco)
4 - 6 tbsp of ice water

Directions:
Directions:
Turn your oven on to 425º
Peel & cut your apples into thin slices & add all the ingredients except for the butter - I save that for the top after you pour it into your crust.
Prepare your crust - mix the flour & salt, add the chilled vegetable shortening using a fork & blend it in so that it's like coarse meal, add the ice cold water 1 tbsp at a time using your fork to blend it so the pastry holds together.
Shape gently into a ball on a lightly floured surface & roll it out.
Place it in a 9" pie pan, add your apple filling, put your 2 tbsp of butter on top, roll out your top crust, place it on & roll under the sides crimp & seal them down so the juices don't spill over.
Take a fork & punch a few holes on top.
If you like, you can mix milk & sugar & brush the top crust with the mixture for a nice golden brown crust.
Place it in the oven for 15 minutes & turn the heat down to 350º for another 25 - 30 minutes or until the apples are soft enough for your taste!!!!

Left over dough was always good rolled out, spread with lots of butter, sprinkle with cinnamon & sugar, roll it up, slice it into little pinwheels & bake it....such a treat!!!
