Ingredients: Cake Batter: 1/2 cup butter 2 eggs 1 1/2 cup all purpose flour 1 cup white sugar 1 1/2 tsp baking powder 1 tsp baking soda 1 tsp vanilla
1 cup sour cream
Cake Filling: 1/2 cup brown sugar 2 tsp cinnamon 1/2 cup walnuts 1/2 cup coconut
Vanilla Butter Frosting (optional): 3 cups powdered sugar 1/3 cup soft butter 1 1/2 tsp vanilla About 3 T milk

Directions:Cake Batter Method: Mix all the cake batter ingredients. Add sour cream last. Set aside. Grease 13" pan.
Cake Filling: In a separate bowl combine the brown sugar, cinnamon, walnuts, coconut.
Assembly Method: Add 1/2 the batter to the prepared pan and than 1/2 the filling. Add last half of the batter and top with remaining filling. Bake at 350º for about 30 minutes.
Butter Frosting: Mix powdered sugar and butter. Stir in vanilla and milk. Beat until frosting is smooth. Spread on cooled coffee cake. |

Notes: Our mom (Irene Huber) was a good old fashioned cook. She rarely consulted recipes but instead cooked and baked by touch, look and feel. She threw in a pinch of this and a tea cup of that. Our father (Lambert Huber) had a real sweet tooth, so no meal was complete without a jar of canned fruit from the cold cellar and a slice of something sweet.
