2 leeks (chopped)
1 medium onion (chopped)
2 cloves garlic (finely chopped)
1 1/2 cups arborio rice
1/2 cup white wine
1/2 cup lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups low-sodium chicken broth
1/2 cup sour cream
1/2 cup grated Parmesan
1/2 cup flat-leaf parsley (chopped)
1 tablespoon tarragon (chopped)

Directions:
1. Heat 2 Tbsp oil in a large skillet over medium heat. Add 2 leeks and I medium onion and cook, covered, stirring occasionally, until just tender, 7 minutes.

2. Stir in 2 cloves garlic; cook 1 minute. Add Arborio rice, wine, lemon juice, salt and pepper and simmer, stirring, until the liquid is absorbed, about 3 minutes.

3. Add the low-sodium chicken broth and bring to a boil, then reduce heat and simmer, stirring occasionally, until the liquid is absorbed and the rice is tender, 18 to 20 minutes.

4. Remove from heat and fold in the sour cream, grated Parmesan, flat-leaf parsley and tarragon.
