olive oil (or butter)
fresh spinach
fresh tomato, diced
mushrooms, sliced
garlic, minced
6 eggs
milk
Swiss cheese or Farmer's cheese

Directions:
Directions:
Sauté spinach, tomato, mushrooms and garlic in olive oil (or butter).
Beat eggs, milk and Swiss cheese together.
Pour egg mixture over vegetable mixture and scramble until done. Can add crumbled bacon and/or green onions or any other vegetable you like.

This will store in a gallon bag in your refrigerator and is easy to carry on your boat. Warm in your microwave or whatever you use to warm stuff!
