½ lb. tenderloin center cut prime boneless steak, cut in half
salt & pepper

Season steaks generously with salt and pepper. Add a spoon of butter and a spoon of frying margarine to frying pan, raise heat to high, add the steak and fry, turning until nice and golden browned, about 5-7 minutes for the first side, and 3-4 minutes on the second side, for medium-rare.

A simple and enjoyable meal for just the two of you! As you all might know by now, we love going to Redfish (aka Sexfish) Island. For a Saturday night treat we sometimes buy a 0.5 lb. tenderloin steak, cut it in half and then pan fry. Add a fried potato or favorite potato chips, a tossed salad and a glass of wine. Watch the sunset and enjoy a nice peaceful night at anchor. Don't forget to put out a liberal scope of anchor chain for peace of mind.
