1 can (20 oz.) pineapple chunks
½ c. packed brown sugar
3 T. cornstarch
1/3 c. cold water
3 T. cider vinegar
1 T. soy sauce
30 frozen, fully cooked meatballs, thawed. I use the Kroger brand 12 oz. package (will not need the whole package)
1 medium green pepper, cut into 1 inch pieces.

Hot cooked rice, optional

Drain pineapple, reserving juice. Set pineapple aside. Add water to juice if needed to measure 1 cup. Pour into a large skillet. In a bowl combine the brown sugar, vinegar and soy sauce. Combine the cornstarch with the cold water (so it does not clump) and add that to the brown sugar, vinegar and soy sauce. Stir into skillet. Bring to a boil over medium heat, stirring constantly until thickened. Add the pineapple, meatballs and green pepper. Simmer, uncovered, for 20 minutes or until heated through, stirring often. Serve over rice if desired.
