8 oz semi-sweet choc. chips
1 stick butter
1 cup sugar
3/4/tsp salt
3 large eggs
1/2 cup flour
1/4 cup cocoa powder
12 small (1 1/2 in) York peppermint patties

Directions:
Directions:
Preheat oven to 350. Line muffin tin with cupcake liners. Melt chocolate chips with butter in microwave or double boiler. Whisk in sugar and salt until mixture is smooth; whisk in eggs to combine. Gently whisk in flour and cocoa powder until smooth (do not overmix). Spoon one heaping tablespoon into each lined cup. Place one peppermint patty on top and press in gently. Tops with 2 tablespoons of batter covering patty completely. Bake, rotating tin halfway through, about 30-35 minutes
