8 oz. orzo
3 T. olive oil
3 T, white wine vinegar
1/2 tsp. crushed red pepper
3/4 tsp. salt
1/4 tsp. pepper
1 1/4 lbs. small zucchini(3-4) cut into thin half moons
8 oz. feta, crumbled (about 2 cups)
1/4 c. chopped fresh dill

Directions:
Directions:
1) Cook the orzo in boiling water per package directions.(al dente, about 10 min)
Drain and run under cold water to cool
2) in a large bowl combine oil,vinegar, red pepper,salt, pepper. Add zucchini and let
marinate for 20 minutes. stir occasionally.
3)Add orzo,feta,dill to zucchini mixture, toss to combine.
Serves 8
