Eggplant (# not specified)
Salt
Pepper
Butter: 3 oz.
Milk: 1 cup
Chopped Celery: 1 cup
Chopped Onion: 1 tbsp.
Grated Cheese (type not specified): 4 tbsp.
Ritz Crackers, rolled: 1 cup

Directions:
Directions:
Preheat oven @ 350º
Scoop inside from eggplant, cook in salt water until tender.
Drain well. Season with salt and pepper.

In a bowl, add butter, milk, chopped celery, onion, cheese & Ritz Crackers and mix together.

Fill hollowed out eggplant with mixture, and Place in baking dish.

Sprinkle top with additional Ritz Crumbs and more cheese if preferred.

Bake 1 hour, until knife inserted comes out clean.
