2 cups Calico Soup Mix
2 12 oz. cans no-salt-added diced tomatoes
6 cups water
¼ cup ketchup
1 cup diced onions
4 cloves garlic, chopped
1 tablespoon ham base
1 tablespoon chili powder
¼ teaspoon black pepper
1 teaspoon basil
1 teaspoon cumin
2 teaspoons soup seasoning
1 teaspoon kosher salt

Wash beans, place into a plastic container, cover with 2 cups of water and let soak in the refrigerator overnight.

Drain beans, rinse and place in crock pot. Add 6 cups of water and all the ingredients. Cook on high 5-6 hours. After cooking, if you want a thicker soup, mix together 3-4 tablespoons corn starch and water, add to soup and stir until the liquid is "clear" and thickened.

Tasty and filling. And best of all, ready when you get home! Mmmm, mmm, good!

Left-overs freeze well. I put individual servings in a zip-lock freezer bag, press out air, zip closed, flatten the package to freeze, and stack 'em in the freezer. Great when you want a quick snack, or are preparing an individual meal.
