2/3 C Sugar
1 C Super Soft Butter (NO SUBSTITUTIONS!)
1/2 tsp Almond Extract
2 C Flour
1/2 Jar Seedless Raspberry Jam
Glaze:
1C Powdered Sugar
1 1/2 tsp Almond Extract
2-3 tsp water

Directions:
Directions:
(Yields 3 dozen) Preheat oven to 350º.
Cream butter, sugar and almond extract at medium speed until creamy. Reduce to low, add flour and beat until well blended.
Shape dough into 1" balls, 2 inches apart on cookie sheet. Make an indentation with your thumb. Fill indentation with about a 1/4 tsp of jam. (If you overfill, you will have messy cookie sheets that are no fun to clean!)
Bake 14-18 minutes. Let stand 1 minute after removing from oven. Transfer to rack (if available) and cool 1 hour.
Make glaze and frost.
Note: I like to make the glaze, transfer to a ziplock bag, nip the end off (Or use a pastry bag with a small round tip) and drizzle over cookies. Faster and prettier!
