Ingredients: 1 3/4 cup pineapple juice 2 tbsp. flour 3 egg yolks 1 cup sugar 1 tbsp. lemon juice 1 box Acini Di Pepe macaroni (16 ounce) 1 can crushed pineapple, drained (20 ounce) 1 can chuck pineapple, drained (20 ounce) 2 cans mandarin oranges 1 package small marshmallows 11 ounce cool whip

Directions:Boil juice (use drained pineapple juice...you might need a bit more, but I just use water to get the full amount), flour, beaten egg yolks and sugar until thick as pudding. Add lemon juice. Boil one box of Acini Di Pepe macaroni until desired tenderness (about 5 - 8 minutes). Drain well. Add cooled pudding mixture to macaroni. Store in refrigerator overnight in air tight container. Then add remaining Ingredients. Mix lightly, but thoroughly.
NOTE: The refrigerated macaroni will be solid...stir to break up before adding remaining ingredients. |
