2 heaping cups brown sugar, not packed 1 cup shortening 2 eggs 2 cups pumpkin, 1 can 1 tsp vanilla 3 1/2 cups flour 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/2 tsp cloves 1/2 tsp ginger 1 tsp salt
ICING:
5 TBSP flour 1 cup milk 1/2 cup butter 1/2 cup shortening 2 cups powder sugar 1/2 tsp vanilla

Directions:Cookies:
Cream sugar and shortening in bowl until light Blend in the eggs Add pumpkin and 1 tsp vanilla Mix well Mix all dry ingredients together Stir into sugar mixture and mix well Drop by spoonfuls onto cookie sheet, I cover mine with parchment paper Bake 400 degrees for 9-12 minutes Cool on wire rack
ICING: Mix 5 TBSP flour with 1 cup milk in saucepan over low heat stirring constantly Heat until thickens, like cream Cool Stir occasionally until ready to mix with other ingredients Cream butter and 1/2 cup shortening until light Add 2 cups powdered sugar and 1/2 tsp vanilla Beat well Add flour mixture gradually beating until smooth Place filling between 2 cookie Can dust with powdered sugar if you like |
